This hearty mushroom pasta salad made with DARI’S creamy mushroom soup will be sure to keep your family coming back for seconds
Ingredients
1 x DARI’S Creamy Mushroom Soup
500g spiral pasta
2 Tbsp olive oil
8 cup mushrooms, sliced
½ cup sour cream
¼ Spanish onion, finely diced
½ cup walnuts, toasted and roughly chopped
1 cup rocket leaves
½ bunch shallots, trimmed and chopped
Freshly ground black pepper, to taste
Method
- Place 1 ½ cups DARI’S Creamy Mushroom Soup in a large saucepan with 5 cups of water. Bring to the boil then add pasta and cook for 12 minutes or until al dente.
- Heat olive oil in a frying pan. Cook mushrooms for 2-3 minutes.
- Strain pasta and transfer the cooked pasta to a large bowl.
- Add the remaining DARI’S Creamy Mushroom Soup, cooked mushrooms and sour cream to the bowl. Fold through the pasta.
- Add Spanish onion, walnuts, rocket and chopped shallots. Gently toss to combine.
- Season to taste with freshly ground black pepper.
