Spicy Hokkien Noodles

Love noodles? Love spice? Then this dish is calling your name… Spicy hokkien noodles made in minutes with DARI’S Spicy Prawn Soup. When it’s this easy and tasty to make, you’ll be wondering where this has been all your life!

Ingredients

1 x DARI’S Spicy Prawn Soup

300g hokkien noodles

2 tbsp peanut oil

1 large red chilli, chopped (seeds, optional)

½ capsicum

1 bunch broccolini, trimmed

100g sugar snap beans

4 shallots, chopped

1 bunch pak choy, stems and leaves separated

¼ cup sweet chilli sauce

½ bunch coriander

Method

  1. Place a colander or fine sieve over a large bowl. Pour DARI’S Spicy Prawn Soup into the colander to separate the ingredients from the stock. Set both aside.
  2. Remove hokkien noodles from the package and place in a bowl filled with cold water. Set aside.
  3. Heat oil in a hot wok. Add half of the chilli and all of the vegetables. Stir-fry for 3-4 minutes until vegetables start to soften.
  4. Add the reserved DARI’S Spicy Prawn Soup ingredients to the wok. Cook, stirring continuously for 1-2 minutes.
  5. Remove noodles from the water. Gently separate the noodles with your hands. Add noodles to the wok and stir to combine
  6. Add the reserved DARI’S Spicy Prawn Soup stock to the wok. Stir to combine and allow to cook for 2-3 minutes.
  7. Add sweet chilli sauce to the wok. Stir to combine.
  8. Serve hokkien noodles with coriander leaves and remaining chilli.
