Vegetarian Paella

Originating from Spain; paella is a rice-based dish often with delicious proteins. We have made a vegetarian version featuring DARI’S Classic Vegetable Soup so you can spend less time in the kitchen and more time doing what you love.

Ingredients

2 x DARI’S Classic Vegetable Soup

1 tsp saffron threads

3 tbsp olive oil

1 onion, diced

3 cloves garlic, crushed

1 tsp salt

1 tbsp smoked paprika

1 tsp sweet Paprika

½ cup semi-dried tomatoes, sliced

½ cup roasted red peppers, slices

1½ cups bomba rice*

⅓ cup frozen peas

½ lemon, cut into wedges

¼ bunch parsley, roughly chopped

Method

  1. Place DARI’S Classic Vegetable Soup in a saucepan with saffron threads. Bring to a boil then reduce heat and keep at a slow simmer until required.
  2. Heat 2 tablespoons of olive oil in a large, heavy based frying pan. Add onion and garlic and cook, stirring for 2-3 minutes.
  3. Add salt, smoked and sweet paprika to the pan. Stir to combine and cook for 1 minute before adding an additional tablespoon of olive oil, semi-dried tomatoes and bell peppers. Cook for a further minute.
  4. Add rice to the pan. Stir thoroughly to ensure the grains are coated.
  5. Slowly transfer the soup from the saucepan to the frying pan. Stir to combine then do not stir again after this point.
  6. Reduce heat to the lowest setting and simmer, uncovered for 25-30 minutes.
  7. Add the frozen peas to the pan. Cover and allow to cook for a further 5 minutes.
  8. Remove the paella from the heat. The rice should be tender and a crust should have formed on the base of the pan.
  9. Serve with lemon wedges and chopped parsley.

*Bomba rice may be replaced with medium grain white rice.
