Ramen-Style Soup

Use DARI’S Chicken Noodle Soup as the base for a homemade Ramen-Style Soup. This recipe is perfect for people craving a Ramen, but don’t quite have the time to cook one from scratch.

 

 

Ingredients

1 x DARI’S Chicken Noodle Soup

1 egg

2 tbsp sesame seeds

1 tsp sesame oil

1 tbsp chilli paste

2 shallots, sliced

½ red chilli, deseeded and sliced

3 shiitake mushrooms, sliced

1 tbsp soy sauce

1 tsp mirin

2 radishes, sliced

2 nori crisps, cut into matchsticks

Method

  1. Place egg in a small saucepan and cover with cold water. Bring the water to the boil and allow to boil for 8 minutes. Remove the egg from the saucepan and set aside in iced water to cool completely before removing the shell.
  2. To toast the sesame seeds, add them to a small frying pan over medium heat. Cook for 1-2 minutes, stirring continuously to prevent burning. Set aside.
  3. In a saucepan, heat the sesame oil over medium heat. Add the chilli paste, half of the shallots and half of the toasted sesame seeds. Cook, stirring for 1-2 minutes.
  4. Add the sliced chilli and mushrooms to the pan. Cook, stirring for 2 minutes or until softened.
  5. Add DARI’S Chicken Noodle Soup to the pan. Stir to combine then allow to simmer for 5 minutes. Add soy sauce and mirin. Stir to combine then remove from the heat.
  6. To assemble the ramen-style soup, pour the soup into a large bowl. Top with boiled egg, radish slices, nori sticks and remaining shallots and sesame seeds. Add additional soy sauce and chilli to taste.
