Healthy soup

This hearty mushroom pasta salad made with DARI’S creamy mushroom soup will be sure to keep your family coming back for seconds

Serves 4-6

Ingredients

1 x DARI’S Creamy Mushroom Soup

500g spiral pasta

2 Tbsp olive oil

8 cup mushrooms, sliced

½ cup sour cream

¼ Spanish onion, finely diced

½ cup walnuts, toasted and roughly chopped

1 cup rocket leaves

½ bunch shallots, trimmed and chopped

Freshly ground black pepper, to taste

Method

  1. Place 1 ½ cups DARI’S Creamy Mushroom Soup in a large saucepan with 5 cups of water. Bring to the boil then add pasta and cook for 12 minutes or until al dente.
  2. Heat olive oil in a frying pan. Cook mushrooms for 2-3 minutes.
  3. Strain pasta and transfer the cooked pasta to a large bowl.
  4. Add the remaining DARI’S Creamy Mushroom Soup, cooked mushrooms and sour cream to the bowl. Fold through the pasta.
  5. Add Spanish onion, walnuts, rocket and chopped shallots. Gently toss to combine.
  6. Season to taste with freshly ground black pepper.
