Tomato and Chorizo Mussels

Ingredients

1 x DARI’S Tomato Soup

1 kg mussels in shells

2 tbsp olive oil

1 onion, diced

4 cloves garlic, crushed

2 Chorizo sausages (200g), sliced

½ cup white wine

½ cup chopped parsley

Sourdough, to serve

Method

  1. Clean and prepare the mussels by removing the beards and any other debris.
  2. Heat oil in a large, heavy-based saucepan over high heat. Cook onion and garlic for 1-2 minutes or until fragrant.
  3. Add chorizo to the pan and cook for 1-2 minutes before stirring and cooking for a further 2-3 minutes. The chorizo should be evenly browned all over.
  4. Add white wine to the pan and simmer until reduced. Add DARI’S Tomato Soup and bring to a simmer. Allow to simmer for 5-10 minutes or until the liquid has reduced slightly.
  5. Add mussels to the pan. Stir to combine then cover and cook for 10 minutes or until the mussels start to open.
  6. To serve, transfer mussels into bowls. Ladle the cooking liquid over the mussels.
  7. Top with chopped parsley and serve with sourdough.
