Veg, Mac and Cheese

Try this twist on an all time classic dish, Mac and Cheese. Use DARI’S Classic Vegetable Soup for added vegetables and added flavour. What might seem like an uncontemporary recipe, might just turn into a new family favourite!

 

 

 

Ingredients

2 x DARI’S Classic Vegetable Soup

1 cup water

2 cups macaroni

1 cup grated tasty cheese

¼ cup parmesan cheese

Method

  1. Preheat oven to 180℃ and prepare a baking dish by lightly coating with oil.
  2. Strain DARI’S Classic Vegetable Soup to separate the stock from the vegetables. Both will be used to make the mac and cheese so do not discard either.
  3. Place stock and 1 cup water in a large saucepan over high heat. Bring to the boil.
  4. Add pasta to the boiling water and cook, uncovered for 5 minutes, stirring to ensure the pasta doesn’t catch on the bottom of the saucepan.
  5. Reduce heat to low and simmer for 3 minutes. Remove from heat.
  6. Add reserved vegetables and half of the tasty cheese.
  7. Transfer the macaroni mixture to the prepared baking dish. Top with parmesan and remaining tasty cheese.
  8. Place in the oven to bake for 5-7 minutes or until the cheese is melted.
  9. Serve as a side dish to accompany grilled chicken or meat.
