If you’re a fan of mussels, this Tomato and Chorizo Mussels recipe made with DARI’S Tomato soup is right up your alley
Ingredients
1 x DARI’S Tomato Soup
1 kg mussels in shells
2 tbsp olive oil
1 onion, diced
4 cloves garlic, crushed
2 Chorizo sausages (200g), sliced
½ cup white wine
½ cup chopped parsley
Sourdough, to serve
Method
- Clean and prepare the mussels by removing the beards and any other debris.
- Heat oil in a large, heavy-based saucepan over high heat. Cook onion and garlic for 1-2 minutes or until fragrant.
- Add chorizo to the pan and cook for 1-2 minutes before stirring and cooking for a further 2-3 minutes. The chorizo should be evenly browned all over.
- Add white wine to the pan and simmer until reduced. Add DARI’S Tomato Soup and bring to a simmer. Allow to simmer for 5-10 minutes or until the liquid has reduced slightly.
- Add mussels to the pan. Stir to combine then cover and cook for 10 minutes or until the mussels start to open.
- To serve, transfer mussels into bowls. Ladle the cooking liquid over the mussels.
- Top with chopped parsley and serve with sourdough.
