Originating from Spain; paella is a rice-based dish often with delicious proteins. We have made a vegetarian version featuring DARI’S Classic Vegetable Soup so you can spend less time in the kitchen and more time doing what you love.
Ingredients
2 x DARI’S Classic Vegetable Soup
1 tsp saffron threads
3 tbsp olive oil
1 onion, diced
3 cloves garlic, crushed
1 tsp salt
1 tbsp smoked paprika
1 tsp sweet Paprika
½ cup semi-dried tomatoes, sliced
½ cup roasted red peppers, slices
1½ cups bomba rice*
⅓ cup frozen peas
½ lemon, cut into wedges
¼ bunch parsley, roughly chopped
Method
- Place DARI’S Classic Vegetable Soup in a saucepan with saffron threads. Bring to a boil then reduce heat and keep at a slow simmer until required.
- Heat 2 tablespoons of olive oil in a large, heavy based frying pan. Add onion and garlic and cook, stirring for 2-3 minutes.
- Add salt, smoked and sweet paprika to the pan. Stir to combine and cook for 1 minute before adding an additional tablespoon of olive oil, semi-dried tomatoes and bell peppers. Cook for a further minute.
- Add rice to the pan. Stir thoroughly to ensure the grains are coated.
- Slowly transfer the soup from the saucepan to the frying pan. Stir to combine then do not stir again after this point.
- Reduce heat to the lowest setting and simmer, uncovered for 25-30 minutes.
- Add the frozen peas to the pan. Cover and allow to cook for a further 5 minutes.
- Remove the paella from the heat. The rice should be tender and a crust should have formed on the base of the pan.
- Serve with lemon wedges and chopped parsley.
*Bomba rice may be replaced with medium grain white rice.
