Turn DARI’S delicious Beef & Mushroom Soup into a creamy and wholesome Beef Stroganoff. This substantial crowd pleaser is perfect for any night of the week to satisfy your family’s hunger.
Ingredients
1 x DARI’S Beef & Mushroom Soup
30g butter
1 onion, diced
250g beef scotch fillet steak, thinly sliced
1 tbsp paprika
1 pinch cayenne pepper
200g cup mushrooms, sliced
2 tbsp tomato paste
1 tsp dijon mustard
½ cup sour cream
200g dried fettuccine
Method
- Heat butter in a large frying pan over medium heat. Add the onions and cook for 3-4 minutes or until translucent.
- Add beef to the pan and cook for 2-3 minutes.
- Add paprika, cayenne pepper and mushrooms. Cook, stirring for 1-2 minutes.
- Add DARI’S Beef & Mushroom Soup, tomato paste, mustard and sour cream to the pan. Stir to combine. Reduce heat to low and simmer for 5-6 minutes or until the sauce thickens slightly.
- In the meantime, bring a large pot of salted water to the boil. Cook pasta in rapidly boiling water for 10-12 minutes or until al dente. Strain and set aside.
- Remove the stroganoff from the heat and allow to stand for 5 minutes before serving.
- Serve stroganoff on a bed of cooked pasta with a dollop of additional sour cream, freshly chopped herbs and cracked pepper.
