How to turn a couple of soups into a delicious filling meal for 4-6 people! This chicken risotto is infused with DARI’S Hearty Chicken Soup flavours and you only need a handful of ingredients.
Ingredients
30g butter
1/2 onion, chopped
2 cloves garlic, crushed
3/4 cup Arborio rice
1/4 cup white wine
2 tubs DARI’S Hearty Chicken Soup
40g butter
20g Parmesan cheese, grated
Method
- Melt the butter in a wide deep saucepan or skillet on medium-high heat. Add the onion and garlic and fry for a few min.
- Add the rice and coat in the butter mixture. Cook for 1 min until translucent.
- Add the wine and cook until it evaporates and alcohol has burnt off for a couple of min.
- Meanwhile, strain the Hearty Chicken Soups and set aside the vegetables and chicken.
- Turn the heat down to low, and add strained stock, ΒΌ cup at a time, until it is absorbed. Stir regularly (every minute or so, so it does not stick). It should take around 20 min.
- Gently fold in the butter and Parmesan cheese.
- Stir the vegetables and chicken through the risotto until heated. Buon Appetito!
