Originating from the south of France, this recipe is both comforting and delicious with tender, juicy pieces of chicken and vegetables using DARI’S Hearty Vegetable Soup.
Ingredients
1 x DARI’S Hearty Vegetable Soup
8 chicken drumsticks
1 tsp salt
Freshly ground black pepper
2 tbsp olive oil
20g butter
1 onion, diced
1 clove garlic, crushed
200g cup mushrooms, halved
½ cup white wine
½ cup pouring cream
3 tbsp chopped parsley
Method
- Place a strainer or colander over a large bowl. Pour DARI’S Hearty Vegetable Soup into the strainer to separate the ingredients from the stock. Set aside.
- Season chicken drumsticks with salt and pepper.
- Add oil to a large frying pan over medium-high heat. Sear chicken on all sides until lightly browned and skin starts to render. Remove from the frying pan and set aside.
- Reduce heat to medium. Add butter to the pan with onion and garlic. Cook, stirring for 3-4 minutes or until translucent.
- Add mushrooms to the pan and cook for 2-3 minutes.
- Add the reserved DARI’S Hearty Vegetable Soup ingredients to the pan. Stir to combine then return the chicken drumsticks to the pan.
- Reduce heat to low. Add the wine and DARI’S Hearty Vegetable Soup stock to the pan. Allow to simmer for 15 minutes, turning the chicken drumsticks occasionally.
- Add cream to the pan and season with additional salt and pepper. Simmer, uncovered for a further 10 minutes.
- Sprinkle with freshly chopped parsley.
- Serve with a side of vegetables or bread of your choice.
