Spicy Prawn Laksa

Ingredients

2 x DARI’S Spicy Prawn Soup

1 tbsp coconut oil

3 baby corns, sliced in half lengthways

½ bunch broccolini, trimmed and cut in half

1 red chilli, finely sliced

1 cup coconut milk

½ lime, cut into wedges

1 cup bean sprouts

3-4 sprigs Thai basil, leaves only

Method

  1. Heat coconut oil in a small saucepan over medium heat.
  2. Add corn, broccolini and half the chilli in the pan and cook for 3-4 minutes.
  3. Add DARI’S Spicy Prawn Soup to the pan and bring to the boil.
  4. Add the coconut milk to the pan. Stir to combine then reduce heat to low and simmer for 5 minutes.
  5. Add a squeeze of lime juice and stir to combine.
  6. Transfer soup to a large bowl. Top with bean sprouts and basil leaves. Garnish with lime wedges and remaining chilli.
