This recipe is the definition of “minimum effort, maximum satisfaction”. With only a few ingredients you can turn DARI’S Classic Pumpkin Soup into this delightful mash with a twist.
Ingredients
1 x DARI’S Classic Pumpkin Soup
1 kg sweet potato, peeled and 3cm diced
3 cups water
20g butter
Salt and pepper
Watercress of fresh herbs, to serve
Olive oil, to serve
Method
- Add the prepared sweet potato to a large saucepan with water and 1½ cups DARI’S Classic Pumpkin Soup.
- Bring to the boil then reduce heat to low and simmer, uncovered for 10 minutes or until the sweet potato is tender.
- Strain the liquid, leaving the cooked sweet potato in the saucepan. Add remaining Dari’s Classic Pumpkin Soup, butter, salt and pepper to the pan and mash until smooth. If the mixture is slightly runny. You may place it over low heat and cook, stirring until thickened.
- Serve the Sweet Potato and Pumpkin Mash with a drizzle of olive oil and top with watercress leaves. Other fresh herbs such as chives or parsley may also be used.
